Creamy Cinnamon Almond Breakfast

Combine the following
1/2 cup part skim ricotta (or low-fat cottage cheese)
1/8 teaspoon vanilla extract
1 T Splenda/cinnamon mixture
Put in microwave briefly until warm. Serve over ½ whole wheat English muffin and sprinkle with 6 crushed almonds.
